The Preparation Of Essence Of Quince

It was estimated until the recent time, the shells of quince ethylene oxide contain Ĺ“nanthylate. However, new research has led to speculation that the fragrant quince principle is derived from the aether pelargonic acid.

The investigations of the action of nitric acid on rue oil, found that besides fatty acids, which had already discovered, pelargonic acid is formed.

This process can be used advantageously for the production of crude ethyl oxide pelargonate, which can be applied in the same way due to their extremely pleasant smell, as those produced as fruitiness. For the production of liquid, which may be called the essence of the quince of road oil, is treated very dilute with the double quantity of nitric acid, and the mixture is heated until it begins to boil.
After some time, two layers should be observed in the liquid: the higher is brownish and the lower layer of oxidation products are road oil and the excess nitric acid.

The bottom layer is freed from most of its nitric acid by evaporation in a zinc chloride bath.
The white bands are often found in the acidic fluid, which presumably the fatty acids are separated by filtration.
The filtrate is mixed with alcohol and digested for a long time by a gentle heat which forms a liquid which has the pleasant odor of the quince in the highest degree and can be purified by distillation.
